STORY BEHIND THE DISH:
A favorite at our house at Christmas time.
| INGREDIENTS: | |
| 2 to 3 cups nice pecan halves | 2 Tblsp butter |
| 1/4
cup honey |
1/2 cup turbinado sugar (sugar in the raw) |
DIRECTIONS:
Spread nuts in a shallow pan or baking sheet. Place in cold oven at 350 deg F and roast 12 to 20 minutes. After roasting, use a colander to gently shake off any dried debris from the nuts.
In a heavy saucepan over medium heat bring honey and butter to boiling. Reduce heat to medium low; simmer 2 minutes, stirring occasionally. When ready the candy should be light brown color. Add nuts to the candy, simmer and stir constantly 2 minutes.
Using a slotted spoon, place nuts on a pan or baking sheet that has been oiled or lined with parchment paper to prevent sticking. Cool slightly in a single layer. With nuts still sticky, place nuts in a gallon plastic zip lock food storage bag, add sugar and toss nuts to coat with sugar crystals. Spread nuts back on paper in a shallow pan to cool.
