STORY BEHIND THE DISH:

Mother always made me a fresh coconut cake for my birthday. Shapes varied, but it was always seven minute frosting with fresh grated coconut.


INGREDIENTS:
2 egg whites, unbeaten 1-1/2 tsp light corn syrup
1-1/2 cups sugar 1 tsp vanilla
5 Tbl water  

DIRECTIONS:

Combine all ingredients except vanilla in top of double boiler. Place over boiling water and cook until frosting will stand in peaks, stirring constantly with a mixer. Remove from heat. Add vanilla & beat until thick.
