STORY BEHIND THE DISH:

My mother made this often. Recipes did not come with instructions since the pies were baked in stoves that used wood for the heat source.


INGREDIENTS:
3 eggs 1 cup buttermilk
2 cups sugar unbaked pie shell, 8" or 9"
1-1/2 tsp lemon extract  

DIRECTIONS:

Beat eggs. Add sugar. Beat until yellow colored. Add lemon extract and buttermilk. Stir well. Pour into an 8 or 9 inch unbaked pie shell. Bake at 350 deg F until set.
